Ethiopian coffee
The birthplace of coffee, my favorite roasts come from Ethiopia. Their beans are either wet or dry-processed with each method changing the bean’s flavor substantially. Wet processed coffee is lighter and lemony while dry-processed coffee is richer and much more complex, often with strong notes of berries and citrus.
Ethiopian Yirgacheffe is highly prized for it’s clean, balanced, and mild flavor profile with hints of berries, nuts, chocolate, lemon, and wine.
The Sidamo region is known for medium-bodied roasts with strong blueberry flavors mixed with mild nuttiness.
Guji is another major region that wet processes their beans bringing out notes of tangerine, lychee, and strawberry with strong acidity.
But my favorite Ethiopian coffees come from the Harrar region. Coffee from this region is dry processed and has strong wine-like characteristics with complex fruit flavors and a rich body. It’s a truly savory cup.
Regardless of the region, the natural sweetness of Ethiopian coffees make them best enjoyed without added sweeteners, and they make especially good espresso beans.
Fruits and vegetables
Ethiopia is known for its diverse range of fruits and vegetables, thanks to its fertile soil and favorable climate. Here are some popular Ethiopian fruits and vegetables:
1. Injera: While not a fruit or vegetable itself, injera is a staple food in Ethiopia. It is a sourdough flatbread made from teff, a tiny grain native to Ethiopia.
2. Papaya: Also known as pawpaw, papaya is a tropical fruit that grows abundantly in Ethiopia. It has a sweet, juicy flesh and is rich in vitamins A and C.
3. Avocado: Avocados are grown in several regions of Ethiopia. They have a creamy texture and are used in various dishes and salads.
4. Mango: Ethiopia produces a variety of mangoes, known for their juicy flesh and sweet flavor. Mangoes are widely enjoyed as a refreshing snack or used in smoothies and desserts.
5. Bananas: Ethiopia has different varieties of bananas, including sweet bananas and plantains. They are a common snack and are also used in cooking.
6. Berries: Various types of berries are found in Ethiopia, such as strawberries, raspberries, and blackberries. These berries are often consumed fresh or used in desserts and jams.
7. Ethiopian kale (Gomen): Gomen is a leafy green vegetable similar to kale or collard greens. It is often sautéed with spices and served as a side dish.
8. Okra: Also known as lady's finger or bamia, okra is a popular vegetable in Ethiopian cuisine. It is often used in stews, soups, and sauces.
9. Ethiopian eggplant (Gomenzeray): This eggplant variety is smaller and has a slightly bitter taste compared to other types. It is used in various dishes, including stews and stir-fries.
10. Ethiopian cabbage (Tikil Gomen): Tikil Gomen is a cabbage-based dish commonly prepared with carrots and potatoes. It is often seasoned with garlic, ginger, and turmeric.

Oil seeds & pulses
Ethiopia is known for its abundant production of oil seeds and pulses, which are important ingredients in both domestic and international cuisines. Here are some popular Ethiopian oil seeds and pulses:
1. Niger seed: Niger seeds are small, black oil seeds commonly grown in Ethiopia. They are rich in oil content and are used to make edible oil. Niger seed oil is widely used in cooking and for medicinal purposes.
2. Sesame seed: Ethiopia is one of the largest producers of sesame seeds in the world. Sesame seeds come in different varieties and colors, such as white, red, and black. They are used for making tahini, oil, and as a topping in bread and pastries.
